All good, except that food is a bit on the salty side, and they didn't mention the extra fees nor ask about food intolerances.

1st day of liberty after probably not the last lockdown. we wanted to celebrate this with an evening in my old hometown that has is roots back in roman times, as a village called aelium cetium. this(aelium) is also the name of the newest approach to fine dining in st.pölten, which has been - to be honest - a rather white patch on the culinary map. the name is also found on the menue, 2 4-6 course options called aelium and cetium. and we had them both. for a quite reasonable price you get high quality products, prepared in a young and modern style, sometimes surprising, sometimes maybe too ambitious, which is as always my subjective opinion. I want to highlight some dishes like "gebeizter kalmar", "seesaibling","gebratene jakobsmuschel", "neuseeländer lamm" and "erfrischung", which have been my favs and could be served also in a star decorated restaurant. some others may need a little refinement in execution or just size.(too big) I also enjoyed the wine pairing, my only critic would be the long gap between the serving of the wine and the dish. No refinement is needed when it comes to the design of the location itself and certainly not with the staff. they shine a bright light on their profession! I am looking forward to my next visit, beeing sure that little inconsistencies will disappear with the gain of experience!
