Solo Sushi in Eilat, A Symphony of Kosher Sushi that Dances between Japanese Craftsmanship and Israeli Innovation My high expectations were rewarded with an experience that eclipsed them. A collaboration between the acclaimed Chef Dror Harosh, the mastermind behind Pedro, and the equally talented Tommy Balardi, Solo Sushi presents a dining experience that is as unforgettable as it is unique. Their reinterpretation of the Wakame salad is a playful yet delicious divergence from the norm. Rather than the expected seaweed composition, it comes to the table with a freshness and crispness that nods to a Caesar salad, all the while maintaining its unmistakable Japanese roots. Moving on, the Tempura Anago, served on a bed of crispy and Selanova lettuce, garnished with cashew and pickled shallots, is nothing short of a flavor epiphany. This beautiful combination of textures and tastes makes every bite a lasting memory. The array of sushi that follows is a testament to the artistry and expertise of the chefs. Every piece, boasting locally-sourced fresh fish, is an exquisite fusion of Japanese technique and Israeli flavours. What sets Solo Sushi apart from its contemporaries is not just its commitment to exceptional cuisine, but also its unwavering adherence to kosher principles. In fact, it might very well be the best kosher sushi eatery worldwide - a testament to the vision of Chef Harosh and Balardi. Not to be overlooked is the meticulously curated kosher wine list, each one chosen to perfectly complement the food. Coupled with surprisingly fair pricing, Solo Sushi succeeds in delivering a dining experience that is both delightful and value-for-money. In conclusion, Solo Sushi should be an essential stop on any Eilat itinerary. And if you haven’t considered a trip, let this exceptional culinary destination be your reason. Solo Sushi is more than just a restaurant; it’s an unforgettable gastronomic adventure.

Excellent restaurant. From our host (Hagai) who shared information on the dishes and locations to our waitress (Roni) who recommended delicious dishes to the food itself which was fresh different and delicious to the point of needing no additional sauce to be added at all. Highly recommend.
