What an unforgettable experience! It's tough to say which dish was my favorite, but every detail of the meal was absolutely perfect. I was on a solo travel trip, and the staff here made me feel as if I were a regular. The sommelier, Vittorio Sofia, developed a fantastic wine pairing to go along with each of my dishes. He also spent time speaking with me about the wines and why they worked with each of the dishes. For the meal, Chef Filippo Sinisgalli truly uses the flavors of the region to create a meal unlike anything else. Each course brought a new and different flavor that left me excited for the next course. I will say, the saffron risotto with calf sweetbreads is something I will be dreaming about for years to come. I cannot wait to come back soon, what a wonderful experience!

I hate leaving negative reviews, but I'd be remiss to not mention how disappointed we were with the quality and taste of the food. Some of the dishes looked visually appealing, however, nothing looked as fantastic as what is posted online, and the flavor (with the exception of maybe the veal cheek) was consistently lackluster. I expected more from what some people have previously said was "the best restaurant" in Bolzano. Food also came out exceptionally slow at more than 30 minutes per course, which was especially jarring since the night before we had incredibly paced, quality food. Perhaps it was a mistake ordering a la carte instead of the degustation menu, however if a dish is not up to the same quality it should not even be offered. Atmosphere was a typical Michelin adjacent affair, rather formal with the majority of the tables filled with couples. Service was good and attentive, albeit I found the showmanship with the white gloved servers and cloche reveals ill matched with the mediocre food. Given the abundance of excellent restaurants in Bolzano, I do not see any reason to visit this restaurant especially at this price point. Unless of course you like looking at your food more than eating it.
Not often do you get told that, because you are not Italian, you might not enjoy “al dente” pasta as much. I actually didn’t enjoy the pasta because it was actually raw. The fettuccia was extremely hard and chewy, while the inside tasted doughy. The “catch of the day” fish was bland and overcooked as if it was frozen. Unfortunately, for a restaurant that advertises its Michelin recommendations for the past couple years, I have to really question the validity of those inspectors. The execution for most of the dishes were very average at best while some were worst than basic home cooking. The pacing was awful for a la carte, with 30-40 mins gaps between dishes. There’s really no point in staff asking why you didn’t enjoy the dish if nothing is done in response to a criticism of the dish. If pasta can’t be done right … at a restaurant in Italy, we definitely have major problems here.
Are there more than 5 stars I can give? The food was phenomenal, and the service was beyond expectations. Our server gave us great recommendations for both food and wine. I would recommend this restaurant to anyone who loves unique and incredible dinner experiences!
